BETSY PRIETO'S BBQ BEEF SHORT RIBS
This is a pressure cooker recipe
Ingredients:
About 6 pounds of beef short ribs
4 T Olive Oil
1 small onion, chopped
1/2 bell pepper, chopped
1 C ketcup
2 T brown sugar
2 T balsamic vinegar
2 T dry mustard
1 C water
1 cup Carolina Treet BBQ Sauce, original recipe

Instructions:
Brown beef ribs in oil in the pressure cooker, then drain off excess fat.
Mix all remaining ingredients and pour over meat.
Put lid on pressure cooker and apply heat. Cook 35-40 minutes after regulator jiggles.
Cool for 5 minutes, then reduce steam pressure by holding pot under cold water until there is no steam pressure left.
Delicious served over egg noodles or rice.
